Xanthan gum

Structure

Monomer sequence:

Main chain: (→4)-β-D-glucose(1→)
Side chain: β-D-mannose(1→4)-β-D-glucoronic acid(1→2)-α-D-6-acetyl-mannose(1→3)

β-D-glucose, β-D-mannose, β-D-glucoronic acid in a 3:3:1 ratio, 4.7 % O-acetyl groups and 3.0-3.5 % pyruvic acid. The molecule appears to be rigid, linear, of low flexibility [1]. A second acetyl group is located at position 6 on the terminal mannose on the side chain [5]. Exists in solution as a single or double helix [3,4].
