Furcellaran

Furcellaran dissolves readily at 75-80°C. Upon cooling it forms a firm, relatively nonelastic, gel. The gel strenght is a function of concentration and the addition of potassium salt. Heating of furcellaran at pH below 5 causes severe hydrolysis and degradation og gel strenght [1].
