Behavior in solution


Soluble in water [2]. The gels formed by curdlan are either elastic or brittle [4].


Behavior with other polymers


Curdlan adheres strongly to sciziphyllan. The adhesion is dependent on the DP of scizophyllan, decreasing with decreasing DP at Mw < 90 kDa [5].

Curdlan adheres weakly (approximately 5-10%) to cyclosophoran, xyloglucan, pustulan, succinoglycan, and locust bean gum [5]. Curdlan does not adhere signicantly (<5%) to xanthan, arabinogalactan, yeast mannan, and pullulan [5].
